Kerala Style Egg Curry, nadan mutta curry

This is a traditional kerala egg curry recipe that is served mostly with appam(pancake made with rice and coconut)/idiyappam (string hoppers), usually served as Kerala breakfast. This curry is made with coconut milk so good to eat with rice/rotis too!
Below Recipe serves 2-3 people.
Ingredients::
For marinating eggs:
• 3 boiled eggs
• 1 tsp red chilly powder
• 1/2 tsp Garam masala powder
• 1 tsp pepper powder
For Egg Curry:
• Oil (best to use coconut oil)
• 1 tsp mustard seeds
• 1 large onion chopped finely
• 1/4 cup tomato puree/paste
• 1 tsp turmeric powder
• 2 tsp red chilly powder
• 1 tsp Garam masala powder
• 1/2 tsp coriander powder
• 1 tsp pepper powder
• 1/2 tsp cumin powder
• 2 tsp ginger garlic paste
• Coriander leaves
• 1/2 cup thick coconut milk or fresh coconut grinded into paste (1/4 cup fresh coconut grinded with water)
• Salt as needed
Directions:
  1. Heat oil in a pan for lightly frying the eggs.
  2. Half the eggs and marinate them with salt, red chilly powder, pepper powder and Garam masala powder.
  3. Fry/roast the eggs until they are slightly golden in color.
  4. Keep the eggs aside.
  5. In the same pan, pop mustard seeds.
  6. Add chopped onion and saute for few minutes.
  7. Next, add tomato puree and mix together.
  8. Add dry spices - red chilly powder, Garam masala powder, coriander powder, pepper powder and cumin powder.
  9. Mix everything and saute well for few minutes. Add some water.
  10. Add some coriander leaves.
  11. Next, add coconut milk or coconut paste and let it boil.
  12. Finally, add the eggs and cook it for few minutes.
  13. Add salt as needed.
  14. Egg Curry is ready. Serve hot!

Cuisine of the week: Indian cuisine of the Malay Peninsula

A distinct cuisine in its own right, the cuisine referred to as "Indian" in Malaysia and Singapore was created and influenced by the many waves of Indian immigrants to South East Asia through much of the 20th century, when both India and the Malay peninsula were under British rule.
The cuisine features not only dishes very similar to those found back in India but also dished created in Malaysia/Singapore. The cuisine merges cooking techniques common in India with ingredients found commonly in South East Asia, resulting in dishes that are loved immensely by the other two predominant ethnicities in the region - the chinese and the malays.
Because the vast majority of the immigrants into Malaysia were from the southern parts of India, the dishes are largely shaped by southern Indian cuisine
Mamak (Indian Muslims) dishes have developed a distinctly Malaysian style. Available throughout the country, the omnipresent Mamak stalls or restaurants are particularly popular among the locals as they offer a wide range of food and some outlets are open 24 hours a day.
Some popular dishes are:
  1. Fish Head Curry: A dish with many Chinese and Malay influences. The head of a Red snapper (ikan merah; literally "red fish") is stewed in curry consisting of varying amounts of coconut milk and tamarind juice with vegetables (lady's fingers and brinjal are common). Usually served with white rice
  2. Mee goreng: Uniquely mlaaysian and often devastatingly spicy, it is made with thin yellow noodles fried with garlic, onion or shallots, fried prawn, chicken, chili, tofu, vegetables, tomatoes, egg. It is ubiquitous in "kopitiams" across Malaysia and Singapore.
  3. Nasi Kandar: A meal of steamed rice along with a myriad of meat and vegetable based curries.
  4. Roti Canai: Also known as "roti prata" in Singapore. It is closely related to the "malabar paratha" found in India. But here, it's taken a life of it's own, coming in dozens of different varieties, most notably: roti telur (stuffed with egg), roti tissu (a thin roti with condensed milk and sigar), roti susu (stuffed with and drizzeled with condesned milk), roti pisang (stuffed with bananas), roti milo (stuffed with and sprinkled with milo powder and condensed milk), roti sardine ... well that's self explanatory. Roti canai deserves a post unto itself
  5. Muratabak: Closely related to roti canai, a thicker "roti" stuffed with chicken / mutton / seafood. Dunked in chicken curry.
  6. Thosai: Closely resembles the Indian dosa/dose. Popular varieties include egg thosai, cheese thosai and chicken thosai.
  7. Nasi Briyani: An adaptation of the Indian Biryani. The use of "garam masalas" is not as much as in the ones found in India. The "dum phukt" method is also not commonly followed. It is typically provided with a "curry sauce", which is not something typically done in India (would be considered sacrilege).
When people talk about Indian food in Singapore and Malaysia, these are the dishes that typically spring to mind first up. There are many others such as Chicken varuval, idiyappam, puttu mayam, mamak rojak, roti jala etc. that are also enjoyed extensively.
Since Indians have continued to immigrate consistently to Malay peninsula, relatively newer Indian dishes are also making their way into mamak stalls, such as tandoori chicken, butter chicken, chicken 65 etc.
One noteworthy mention is the love for naan, and innovations such as "cheese naans" that can commonly be seen in restaurants in the region.

Today i have for you all easy and simple Sweet Coconut Milk recipe that’s usually used as an accompaniment for appam- idiyappam . Known as Kayi haalu in Kannada / thengai paal in tamil .. it’s one of the match made in heaven for ottu shavige . In my home whenever i make ottu shavige , this sweet coconut milk is a must . If you love noodles then you are definitely going to love Idiyappam. Idiyappam is a South Indian dish which is Boil water in a steamer. When the steam starts coming, press or rotate the maker onto the steamer bowl or plate to make noodle. Cover the steamer and cook the string hopper (idiyappam) for 5 minutes. Let it cool a little before transferring to a plate. Prepare small oblong balls and load it in the idiyappam press. Press the idiyappam strings onto idli plates. After 10 minutes of steaming, rest the idli plates for 5 minutes before removing the idiyappam. Coconut milk. Take sherred coconut and run it in a blender/mixie adding 1 cup of water. In the idli steamer pour water and place the idiyappam steamer plate above it and steam it for 10-12mins.Turn over to remove the idiyappam, then spread it in a plate. Once cooled down, crumble it so that the strings get separated,Set aside.In a mixer add fried gram dal and powder it coarsely. Idiyappam with Coconut Milk, also known as string hoppers is made with rice flour and coconut. They are formed as noodles and then steamed to make the Idiyappam. It is very useful for digestion purposes, increases the water content in your body and also helps to reduce the weight. This dish is very easy and can be made with very less time. Put the idiyappam batter in to the idiayappa maker & place it in the idli plate. Steam it for 8 or 10 minutes. Now the idiyappam is ready. Shred the coconut, grind it in mixie and strain it. This milk is called coconut milk, let us make it sweet by adding sugar and grind it again. It becomes watery mix.
